Welsh food doesnt get the attention it deserves.

Welsh food isn’t complicated. It’s not elegant like French food, and it’s not spiced like Indian food. It doesn’t have the sauces and variety of vegetables of Italian, or the delicate flavours of Japanese.

Welsh food is hearty. It’s soulful. It uses simple ingredients accessible in the chilly, damp climate of Wales to make food that’ll last you through tough times.

In the best possible way, it’s peasant food.

Most of the recipes here will be what you expect - an ingredient list with clearly-defined quantities, and a method with easy instructions. I’ve kept any preambles to a minimum, we all get annoyed at drawn-out online recipes where the author explains the whole history of the dish! But some are vaguer, with inprecise amounts and antiquated language.

This is intentional. Many recipes here will be old and traditional, many not available online until now. I’ve chosen to keep them as is on purpose - food is a way of connecting to our past, and while modernising and standardising them will probably make a tastier dish, that’s for you to experiment with!
