Glamorgan Sausage

Ingredients

  • 150g fine breadcrumbs
  • 75g grated hard cheese
  • 1 small onion
  • 1 egg
  • Pinch of mustard powder
  • Pinch of mixed herbs (thyme and parsley are excellent choices)
  • 25g butter
  • Salt and pepper

Glamorgan sausages are a delightful vegeterian

Method

  1. Prep base: Finely chop the onions and gently fry in the butter until softened. Add the onions to the other dry ingredients in a bowl.

  2. Shape sausages: Mix the egg yolk in with the dry mixture. Divide into 6 equal pieces, and shape into sausage shapes. WHen shaped, roll in flour and dip into lightly-beaten egg white, then finally roll in fine breadcrumbs.

  3. Fry: Fry the sausages in plenty of hot oil, until the coating is crisp. If reheating is desired, use an oven (air fryer is fine) or briefly re-fry - microwaving will cause sogginess.
