Glamorgan Sausage

Ingredients
- 150g fine breadcrumbs
- 75g grated hard cheese
- 1 small onion
- 1 egg
- Pinch of mustard powder
- Pinch of mixed herbs (thyme and parsley are excellent choices)
- 25g butter
- Salt and pepper
Glamorgan sausages are a delightful vegeterian
Method

Prep base: Finely chop the onions and gently fry in the butter until softened. Add the onions to the other dry ingredients in a bowl.

Shape sausages: Mix the egg yolk in with the dry mixture. Divide into 6 equal pieces, and shape into sausage shapes. WHen shaped, roll in flour and dip into lightly-beaten egg white, then finally roll in fine breadcrumbs.

Fry: Fry the sausages in plenty of hot oil, until the coating is crisp. If reheating is desired, use an oven (air fryer is fine) or briefly re-fry - microwaving will cause sogginess.
