Green Pancakes

Crempog Las are a variant on the traditional pancake that add parlsey and onions. THink of them as a Welsh version of the Korean Pajeon, with a more herbal taste.

Ingredients

  • 225g flour
  • 2 eggs
  • chopped parsley
  • spring onions or shallots
  • 300ml milk
  • Salt and pepper

Method

  1. Mix the flour, eggs and milk to create a batter.
  2. Stir in the parsley, onion, and some salt and pepper.
  3. Put a frying pan on moderate heat with a good amount of butter.
  4. Ladle into a frying pan (take care to avoid overcrowding!) and cook through on both sides, 2-3 minutes.
  5. Spread with butter and eat while hot!
